- ¼ cup powdered sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 ¼ cups whole milk
- ¼ cup granulated sugar
- 2 large egg yolks (for pastry cream)
- 1 cup fresh raspberries
- Apricot or raspberry jam (for glaze)
Instructions
- Prepare Tart Shells: Mix flour and powdered sugar; add butter and blend until crumbly. Stir in egg yolk and vanilla; add ice water until dough forms. Chill for 30 minutes.
- Bake Tart Shells: Preheat oven to 350°F (175°C). Roll out chilled dough to about ⅛ inch thick; cut circles and press into tartlet pans. Prick bottoms and bake for 15–20 minutes until golden. Cool.
- Make Pastry Cream: Heat milk until warm. Whisk together sugar, egg yolks, and cornstarch; combine with warm milk slowly. Cook until thickened; stir in vanilla extract and butter.
- Assemble Tarts: Fill cooled shells with pastry cream; top with raspberries and brush with melted jam.
