Ingredients

  • 1 cup cooked lentils
  • 1/3 cup fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • 2 bunches curly parsley
  • 10 mint leaves
  • ½ English cucumber (diced)
  • ½ cup diced tomatoes
  • ⅓ cup finely diced red onion
  • Kosher salt and freshly ground black pepper to taste
  • Optional: ½ teaspoon sumac

Instructions

  1. If using uncooked lentils, rinse them under cold water. In a pot, combine with water and add a bay leaf. Bring to a boil, then simmer until tender (20–25 minutes). Drain and cool.
  2. In a mixing bowl, combine the cooled lentils, lemon juice, and olive oil. Stir well.
  3. Finely chop the parsley and mint. In another bowl, mix with cucumber, tomatoes, and red onion.
  4. Add the lentil mixture to the vegetables and gently stir to combine.
  5. Season just before serving with salt, pepper, and sumac if desired.
