  • ½ teaspoon dried oregano
  • ½ teaspoon chili powder
  • 1 cup long-grain white rice (uncooked)
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 2 cups chicken broth (low sodium preferred)

  • ¼ cup fresh cilantro (chopped, for garnish)
  • 1 lime (cut into wedges, for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and bell pepper until soft, about 5 minutes. Add garlic and cook for 1 minute.
  2. Stir in smoked sausage and cook until browned, around 5–7 minutes.
  3. Add cumin, paprika, oregano, and chili powder; mix well.
  4. Incorporate uncooked rice and chicken broth; season with salt and pepper.
  5. Bring to a boil, then reduce heat and cover. Simmer for about 20 minutes until rice is tender.
  6. Fold in rinsed black beans and heat through for another 5 minutes.
  7. Serve hot with fresh cilantro and lime wedges.
