  • 1 ⅓ cups water (divided)
  • 3 envelopes unflavored, powdered gelatin (about 7 ½ teaspoons)
  • 1 ½ cups granulated sugar
  • 1 cup light corn syrup
  • 1 teaspoon peppermint extract
  • ¼ teaspoon kosher salt
  • 12 teaspoons red food coloring
  • ⅓ cup powdered sugar or cornstarch (for rolling)

Instructions

  1. Grease a 9×9-inch baking pan and set aside.
  2. In a stand mixer bowl, combine ⅔ cup cold water with gelatin and let bloom.
  3. In a saucepan, heat granulated sugar, corn syrup, and ⅔ cup water over medium heat until boiling; ensure it reaches 240°F.
  4. Slowly pour the hot sugar mixture into the bloomed gelatin while mixing on low speed. Add peppermint extract and salt.
  5. Increase mixer speed to high and whip until stiff peaks form (about 10-12 minutes). Pour into the prepared pan and spread evenly.
  6. While still warm, add drops of red food coloring and swirl with a toothpick.
  7. Let set at room temperature for at least 4 hours or refrigerate for 2 hours until firm.
  8. Dust with powdered sugar/cornstarch before cutting into squares.
