  • 1/2 cup grated parmesan cheese or cojita cheese
  • 1/3 cup melted butter
  • 1/3 cup mayonnaise
  • 1 teaspoon chili powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon fresh ground black pepper

Instructions

  1. Preheat your Blackstone griddle to medium-high heat (375 – 425°F).
  2. In a bowl, mix parmesan cheese, melted butter, mayonnaise, chili powder, sea salt, and black pepper until well combined.
  3. Brush each ear of corn generously with the cheese mixture and wrap tightly in aluminum foil.
  4. Place wrapped corn on the griddle and cook for 13 to 17 minutes, flipping every five minutes until tender.
  5. Carefully unwrap and serve hot, adding extra parmesan if desired.
