Ingredients

  • Large Zucchini (4 medium-large)
  • Whole Milk Ricotta Cheese (15 ounces)
  • Shredded Low-Moisture Mozzarella Cheese (1.5 cups)
  • Grated Parmesan Cheese (1 cup)
  • Large Egg (1)
  • Minced Garlic (3 cloves)
  • Fresh Basil (¼ cup, chopped)
  • Salt and Black Pepper
  • Your Favorite Marinara Sauce (2 cups)

Instructions

  1. Wash and dry zucchini; cut into ⅛-inch thick planks using a mandoline slicer.
  2. Sprinkle salt on zucchini planks and let them sweat for 20-30 minutes to remove excess moisture.
  3. Pat dry the planks thoroughly before preheating your oven to 400°F.
  4. In a bowl, mix ricotta, mozzarella, Parmesan, egg, garlic, basil, salt, and pepper until well combined.
  5. Spread marinara sauce on the bottom of a baking dish; assemble the roll-ups by spreading filling on zucchini planks and rolling them tightly.
  6. Place seam-side down in the dish; cover with remaining marinara sauce and sprinkle with mozzarella and Parmesan cheese.
  7. Bake for 20-25 minutes until bubbly and golden brown.
