- Large Zucchini (4 medium-large)
- Whole Milk Ricotta Cheese (15 ounces)
- Shredded Low-Moisture Mozzarella Cheese (1.5 cups)
- Grated Parmesan Cheese (1 cup)
- Large Egg (1)
- Minced Garlic (3 cloves)
- Fresh Basil (¼ cup, chopped)
- Salt and Black Pepper
- Your Favorite Marinara Sauce (2 cups)
Instructions
- Wash and dry zucchini; cut into ⅛-inch thick planks using a mandoline slicer.
- Sprinkle salt on zucchini planks and let them sweat for 20-30 minutes to remove excess moisture.
- Pat dry the planks thoroughly before preheating your oven to 400°F.
- In a bowl, mix ricotta, mozzarella, Parmesan, egg, garlic, basil, salt, and pepper until well combined.
- Spread marinara sauce on the bottom of a baking dish; assemble the roll-ups by spreading filling on zucchini planks and rolling them tightly.
- Place seam-side down in the dish; cover with remaining marinara sauce and sprinkle with mozzarella and Parmesan cheese.
