Ingredients
- 200g udon noodles
- 100g shrimp (8–10 pieces)
- 1 garlic clove (minced)
- 1 yellow onion (sliced)
- 120g white mushrooms (sliced)
- 1 carrot (matchstick-cut)
- 1 spring onion (chopped, green & white parts separated)
Instructions
- Boil udon noodles according to package instructions; drain and rinse with cold water.
- In a pan, heat oil and sauté minced garlic until fragrant. Add mushrooms and cook until soft.
- Stir in onions and carrots; season with salt and pepper, cooking for about 3 minutes.
- In the same pan, add more oil and cook shrimp with soy sauce until they turn pink.
- Toss in the boiled udon noodles, stirring on high heat until slightly crispy.
