  • 1 medium yellow onion (chopped)
  • 3 ribs celery (chopped)
  • 3 carrots (sliced)
  • 4 cloves garlic (minced)
  • ¾ cup pearl barley (rinsed)
  • 6 cups low sodium vegetable broth
  • 15 oz can petite diced tomatoes
  • ½ pound Yukon gold potatoes (chopped)
  • ¾ cup frozen green beans

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add onions, celery, and carrots; sauté for about 5 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds.
  2. Add rinsed pearl barley, Italian seasoning, thyme, salt, and pepper. Mix well.
  3. Pour in vegetable broth and diced tomatoes; bring to a simmer. Cover and cook on low heat for about 25 minutes.
  4. Stir in chopped potatoes; cover again and simmer for another 20-35 minutes until barley is tender. Add frozen green beans during the last 5 minutes of cooking.
  5. Remove bay leaf before serving hot.
