Ingredients
- 8.8 oz pasta
- 2 cans cannellini beans
- 3 tablespoons olive oil
- 2 medium red onions
- 2 large garlic cloves
- 1/4 teaspoon red chili flakes
- 1 tablespoon fresh thyme
- 2 cups baby spinach
- 1/2 cup sundried tomatoes
- 1/2 cup roasted red pepper
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Reserve 2-3 cups of pasta water before draining.
- In a food processor, combine one drained can of cannellini beans with the second can (un-drained), 1 tablespoon olive oil, and a pinch of salt. Blend until creamy.
- Sauté diced red onions in the remaining olive oil over medium-low heat for about 7–8 minutes until softened. Add garlic, red chili flakes, and fresh thyme; cook for an additional minute.
- Stir in the blended bean mixture along with reserved pasta water until well combined. Add spinach and simmer until wilted.
- Toss cooked pasta with the sauce mixture, then mix in sundried tomatoes and roasted red pepper. Season with salt and pepper to taste.
