- 2 Tbsp extra-virgin olive oil
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 2 Tbsp tomato paste
- 3/4 cup sun-dried tomatoes
- 2 cans butter beans, drained
- 4 cups lower-sodium vegetable broth
- 4 cups chopped lacinato kale
- 1/4 cup heavy cream
- Freshly grated Parmesan cheese for garnish
Instructions
- Heat olive oil in a medium-large stock pot over medium heat. Add rosemary sprig and sauté for one minute.
- Add diced onion and cook until translucent (5-6 minutes). Stir in minced garlic, tomato paste, and red pepper flakes; cook until fragrant (2-3 minutes).
- Mix in dried oregano and sun-dried tomatoes; cook for one more minute.
- Add butter beans, vegetable broth, salt, and pepper. Bring to a simmer and cook uncovered for about 15 minutes.
- Remove the rosemary sprig and blend half of the soup until mostly smooth using an immersion blender.
- Return blended soup to the pot and stir in kale and heavy cream. Cook until kale is wilted (2-4 minutes). Adjust seasoning if needed before serving.
