Ingredients
- 24 turkey meatballs
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 medium carrot, diced
- 2–3 celery stalks, diced
- 2 large garlic cloves, minced
- 1 tablespoon Italian seasoning mix
- 1/4 teaspoon red chili flakes
- 2 tablespoons tomato paste
- 1 1/2 cups tomato sauce (passata)
- 5 cups chicken stock
- 3/4 cup orzo
- 2 cups baby spinach
- 1/2 cup half and half (single cream)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large stock pot over medium heat. Sauté onion, carrot, and celery for 7–8 minutes until softened.
- Add garlic, Italian seasoning, and red chili flakes; cook for another minute.
- Stir in tomato paste and sauce, then add chicken stock and orzo. Bring to a boil.
- Lower heat and simmer for about 10 minutes.
- Stir in turkey meatballs and spinach; cover and simmer until spinach wilts (about 1–2 minutes).
- Add half and half, season with salt and pepper before serving.
