- 4 grouper fillets
- 1 cup coconut milk
- 2 tablespoons butter
- 1 medium onion
- 2 garlic cloves
- 1 teaspoon grated ginger
- 1 small pineapple
- 1 tablespoon Thai red curry paste
- Lime juice and zest
- Olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper (optional)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon honey (optional)
- 1 small red chili (optional)
- Fresh cilantro (for garnish)
- Lime wedges (for serving)

Instructions
- Pat grouper fillets dry and season with garlic powder, paprika, cayenne, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat and cook the fillets for about 3-4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, melt butter and sauté onion until softened. Add garlic and ginger; cook until fragrant.
- Stir in red curry paste and turmeric, then pour in coconut milk along with lime zest and juice. Add diced pineapple and simmer for 5-7 minutes.
- Return grouper to the skillet, spoon sauce over it, and warm through for another 2-3 minutes before serving.
