  • 4 grouper fillets (68 oz each)
  • 1 cup coconut milk (unsweetened, full fat)
  • 2 tablespoons butter
  • 1 tablespoon Thai red curry paste
  • 1 medium onion (finely diced)
  • 2 garlic cloves (minced)
  • Juice of 1 lime
  • Diced pineapple (fresh or canned)

Instructions

  1. Prepare the grouper by patting dry and seasoning with garlic powder, paprika, cayenne pepper, salt, and pepper.
  2. In a skillet over medium-high heat, cook the seasoned grouper for 3-4 minutes on each side until golden brown.
  3. Remove the fish and in the same skillet, melt butter. Sauté onion, garlic, and ginger until fragrant.
  4. Stir in red curry paste and turmeric; then add coconut milk, lime juice, pineapple, and honey if desired. Simmer until slightly thickened.
  5. Return the grouper to the skillet, spoon sauce over it, and cook for an additional 2-3 minutes to meld flavors.
