- 1 tablespoon olive oil
- 25 grams butter
- 1 onion, chopped
- ½ sweet potato, peeled and chopped
- 3 cloves garlic, minced
- ½ teaspoon ground cinnamon
- 2 tablespoons fresh basil, torn
- 2 (400g) cans chopped tomatoes
- 500ml chicken stock
- ½ teaspoon sugar
- 50ml single cream
- 125g dried breadcrumbs
- ½ teaspoon baking powder
- 75g mature cheddar, grated
- 1 teaspoon mustard powder
- 1 teaspoon dried oregano
- 1 egg
- 50g cream cheese
Instructions
- Heat olive oil and butter in a large pot over medium heat. Sauté onion and sweet potato for 5-10 minutes until soft.
- Add minced garlic and ground cinnamon to the pot. Cook for an additional minute until fragrant. Stir in torn basil, canned tomatoes, and chicken stock.
- Bring the mixture to a boil. Once boiling, reduce heat to low and cover the pot. Let it simmer for about 20 minutes to allow flavors to develop.
- In a mixing bowl, combine dried breadcrumbs, baking powder, grated cheddar, mustard powder, oregano, egg, and cream cheese. Mix until you form a stiff dough-like mixture before shaping it into eight balls.
- Once the soup has finished simmering, blend it using either an immersion blender or regular blender until smooth. Add sugar along with salt and pepper to taste. Finally, stir in single cream.
- Carefully drop dumpling balls into the simmering soup. Let them cook for about 10 minutes without stirring so they can puff up nicely. Serve two dumplings per bowl alongside generous portions of warm soup.
