Ingredients

- ¼ cup Tamari (or soy sauce)
- 2 tablespoons Thai sweet chili sauce
- Juice of 1 lime
- ⅓ cup chopped cashews
- Butter lettuce leaves
Instructions
- In a non-stick skillet, heat sesame oil over medium-high heat. Add onions and cook until translucent. Stir in garlic and ginger; cook for another 2 minutes.
- Add ground chicken, breaking it apart with a spoon. Cook until golden brown, about 3–4 minutes.
- In a small bowl, mix Tamari, Thai chili sauce, lime juice, and maple syrup. Pour over cooked chicken with chopped cashews; stir gently.
- Mix in shredded carrots, scallions, and cilantro. Remove from heat.
