  • 1 lb ground chicken
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1 tbsp soy sauce
  • 1/4 cup hoisin sauce
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 2 tsp cornstarch
  • 1 cup white rice
  • 1 1/2 cups water
  • 1 tsp butter
  • 1 pinch salt
  • 1 tbsp sesame oil
  • 1 cup snap peas
  • 1 cup carrot matchsticks
  • 1 cup red cabbage (thinly sliced)
  • salt & pepper to taste
  • 3 green onions (sliced)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat oven to 400°F. Cook rice according to package instructions.
  2. In a mixing bowl, combine ground chicken, breadcrumbs, egg, soy sauce, garlic, ginger, and salt. Form into meatballs and place on a baking sheet.
  3. Bake meatballs for about 18 minutes until cooked through.
  4. In a skillet, heat sesame oil and stir-fry snap peas, carrots, and red cabbage for 5 minutes.
  5. Prepare teriyaki sauce by combining hoisin sauce, soy sauce, honey, and cornstarch; microwave until thickened.
  6. Toss baked meatballs in teriyaki sauce and serve over rice with stir-fried veggies.
