Ingredients
- 6 bell peppers
- 1 lb lean ground beef
- 2 cups cooked brown rice
- 14.5 oz can diced tomatoes
- 18 oz can black beans (drained & rinsed)
- 15 oz can corn (drained & rinsed)
- 1 onion (diced)
- 1 taco seasoning packet
- 1 ½ cups shredded cheddar jack cheese
Instructions
- Preheat oven to 350°F (175°C). Cut bell peppers in half lengthwise and remove seeds.
- Bake peppers in a baking dish for 5 minutes to soften.
- In a skillet, sauté onion with olive oil and spices until soft.
- Add ground beef and cook until browned.
- Mix in diced tomatoes, black beans, corn, brown rice, and taco seasoning; stir well.
- Generously fill each pepper with the mixture and place back in the baking dish.
- Cover with foil and bake for 10 minutes.
- Uncover, top with cheese, and bake for an additional 15 minutes until melted.
