  • 1 ¾ cup warm water (105-115°F)
  • 2 tsp sugar
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil (divided)
  • 1 jar raspberry jam (preferably Bonne Maman)
  • 2 cups powdered sugar
  • 24 tbsp milk (to achieve desired icing consistency)

Instructions

  1. In a stand mixer, mix warm water and sugar until dissolved. Add yeast and let sit for 5 minutes.
  2. Add bread flour, all-purpose flour, and salt to the mixer, mixing until sticky dough forms.
  3. Coat a large mixing bowl with 2 tbsp olive oil, transfer dough, cover with plastic wrap, and let rise for about an hour.
  4. Transfer risen dough to a greased metal pan, folding it over itself several times. Let rise again for another hour.
  5. Preheat oven to 425°F. Poke holes in the risen dough and spread raspberry jam evenly on top.
  6. Bake for 18-22 minutes or until golden brown.
  7. After cooling slightly, poke additional holes in the bread and fill them with more jam.
  8. Prepare icing by mixing powdered sugar with milk until smooth. Frost the focaccia once cooled.
