Ingredients
- 1 ¾ cup warm water (105-115°F)
- 2 tsp sugar
- 1 packet active dry yeast
- 2 cups bread flour
- 2 cups all-purpose flour
- 2 tsp salt
- 6 tbsp olive oil (divided)
- 1 jar raspberry jam (preferably Bonne Maman)
- 2 cups powdered sugar
- 2–4 tbsp milk (to achieve desired icing consistency)
Instructions
- In a stand mixer, mix warm water and sugar until dissolved. Add yeast and let sit for 5 minutes.
- Add bread flour, all-purpose flour, and salt to the mixer, mixing until sticky dough forms.
- Coat a large mixing bowl with 2 tbsp olive oil, transfer dough, cover with plastic wrap, and let rise for about an hour.
- Transfer risen dough to a greased metal pan, folding it over itself several times. Let rise again for another hour.
- Preheat oven to 425°F. Poke holes in the risen dough and spread raspberry jam evenly on top.
- Bake for 18-22 minutes or until golden brown.
- After cooling slightly, poke additional holes in the bread and fill them with more jam.
- Prepare icing by mixing powdered sugar with milk until smooth. Frost the focaccia once cooled.
