Ingredients
- 1/2 cup unsalted butter (room temperature)
- 1 cup all-purpose flour (plus 1/2 cup for filling)
- 1/4 cup powdered sugar
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 1 tbsp lemon zest
- 3 large eggs (room temperature)
- 1 1/2 cups granulated sugar
- Powdered sugar (for dusting)
Instructions
- Preheat oven to 350°F (175°C).
- Cream butter and powdered sugar in a bowl, gradually adding in 1 cup of flour until combined. Press into an 8" x 8" baking pan.
- Bake crust for about 15 minutes until golden.
- In another bowl, whisk eggs and granulated sugar until blended. Add lemon juice and zest; mix well. Sift in remaining flour, stirring gently.
- Pour filling over baked crust and return to oven for another 25-30 minutes or until set.
- Cool completely before dusting with powdered sugar and cutting into squares.
