- 6 medium zucchini and/or summer squash
- 5 garlic cloves
- 1 pint cherry or grape tomatoes
- 2 tablespoons olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1/2 cup Parmesan cheese
- Fresh parsley and basil
Instructions
- Sauté minced garlic in one tablespoon of olive oil over medium-high heat until fragrant (about 1 minute).
