Ingredients

Scale
  • 1 ¼ cups all-purpose flour
  • ½ cup unsalted butter (cold, cubed)
  • ¼ cup powdered sugar
  • 1 egg yolk
  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 cups fresh strawberries (thinly sliced)
  • 2 tbsp apricot jam (for glaze)

Instructions

  1. For the tart crust: In a food processor, blend flour, butter, and powdered sugar until crumbly. Add egg yolk and ice water until dough forms. Chill for 30 minutes. Preheat oven to 350°F (175°C). Roll out chilled dough into a tart pan and bake for 15 minutes until golden brown.
  2. For the custard cream: Warm milk in a saucepan. Whisk together sugar, egg yolks, and cornstarch in another bowl. Gradually add warm milk while whisking. Cook over low heat until thickened; stir in vanilla extract and butter. Allow to cool.
  3. Assemble: Spread custard cream on cooled tart crust. Arrange sliced strawberries on top in concentric circles.
  4. Glaze: Mix apricot jam with warm water; brush over strawberries for shine. Chill before serving.
