Description

Ingredients

  • 8 oz rice noodles (or lo mein/udon)
  • 1 lb beef sirloin or flank steak, thinly sliced
  • 2 tbsp cornstarch
  • 3 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 2 cups broccoli florets
  • 3 green onions, sliced
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp honey or brown sugar
  • 2 tbsp rice vinegar or lime juice
  • 1 tbsp sesame oil

Instructions

  1. Cook the rice noodles according to package instructions, drain, and set aside.
  2. Toss the sliced beef with cornstarch until coated.
  3. Heat 2 tablespoons of vegetable oil in a large skillet over high heat. Sear the beef for about 2–3 minutes on each side until browned; remove and set aside.
  4. In the same skillet, add the remaining oil and stir-fry the bell pepper and broccoli for about 4–5 minutes until tender-crisp. Add green onions, garlic, and ginger; cook for an additional minute.
  5. Whisk together soy sauce, hoisin sauce, honey, rice vinegar (or lime juice), and sesame oil in a bowl.
  6. Return the beef to the skillet along with cooked noodles and pour the sauce over everything. Toss to combine well.
  7. Serve hot garnished with extra green onions.
