  • 2 hearts romaine lettuce (chopped)
  • 1 cup roasted corn kernels
  • 15.5-ounce can black beans (drained and rinsed)
  • 1 cup grape tomatoes (halved)
  • 1 cup red bell pepper (diced)
  • 1 medium avocado (diced)
  • ⅓ cup shredded Mexican cheese blend
  • ¼ cup cilantro (chopped)
  • ½ cup ranch dressing
  • 2 ½ teaspoons taco seasoning

Instructions

  1. Heat a cast iron skillet over medium heat.
  2. Pound the chicken breasts to about ½ inch thick in a resealable bag; season with salt and pepper.
  3. Add olive oil to the skillet and cook the chicken for about 7 minutes on each side or until the internal temperature reaches 165°F. Remove and let rest.
  4. In a large bowl, combine chopped romaine lettuce with corn, black beans, tomatoes, bell pepper, avocado, and cheese.
  5. Dice the rested chicken and add it to the salad; sprinkle with cilantro.
  6. Mix ranch dressing with taco seasoning in a measuring cup; drizzle over salad and toss gently before serving.
