  • 2 cups cooked chicken (shredded or chopped)
  • 1 cup corn (drained and rinsed)
  • 1 cup black beans (drained and rinsed)
  • 1 cup spinach (chopped)
  • 1 cup diced red bell pepper
  • 1/4 cup diced jalapeno (de-seeded)
  • 2 cups Monterey jack cheese
  • 20 egg roll wrappers
  • 1/2 TBS cumin
  • 1/2 TBS chili powder
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, combine the chicken, corn, black beans, spinach, red bell pepper, and jalapeno.
  2. Add cumin, chili powder, salt, and black pepper; stir until well mixed.
  3. Fold in the Monterey jack cheese until incorporated.
  4. Lay an egg roll wrapper flat and place 2-3 tablespoons of filling in the center.
  5. Roll up tightly by folding the bottom corner over the filling and sealing the edges with water.
  6. Repeat until all filling is used.
  7. Freeze or cook immediately by frying or baking.
