  • ⅔ cup red onion (thinly sliced)
  • ¾ cup shredded cheddar cheese
  • ⅔ cup fresh cilantro (chopped)
  • ½ cup plain Greek yogurt
  • 3 Tbsp avocado oil or olive oil
  • 1 Tbsp rice vinegar or apple cider vinegar
  • 2 Tbsp fresh lime juice
  • 1 Tbsp pure maple syrup
  • 2 to 5 chipotle chilis in adobo sauce
  • 1 large clove garlic (minced)
  • ½ tsp sea salt (to taste)
  • ¼ tsp black pepper (to taste)

Instructions

  1. Prepare all salad ingredients: chop spring greens, cube chicken, and drain black beans and corn.
  2. Add halved cherry tomatoes, diced avocado, thinly sliced red onion, and shredded cheese to the mixing bowl.
  3. For the dressing, mix Greek yogurt, avocado oil, vinegar, lime juice, maple syrup, minced garlic, chipotle chilis, sea salt, and black pepper in a separate bowl until smooth.
  4. Pour dressing over salad ingredients and toss gently to combine.
