Ingredients
- 2 pounds boneless skinless chicken breasts
- 4 cups chicken broth
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cans fire-roasted mild diced green chiles
- 2 cans cannellini beans (drained and rinsed)
- 1 can pinto beans (drained and rinsed)
- 1 1/2 cups frozen corn
- 3/4 block cream cheese
Instructions
- Place chicken breasts in the bottom of a slow cooker. Season with cumin, salt, pepper, chili powder, cayenne pepper, oregano, and coriander.
- Add chicken broth, onions, garlic, green chiles, and bay leaf. If desired, add beans now; otherwise, save for later.
- Cook on LOW for 6–8 hours or HIGH for 3–4 hours. In the last two hours of cooking, add drained beans and corn.
- Blend about 2 cups of the chili until creamy and return to the slow cooker.
- Shred the chicken with forks and mix back into the chili.
- Adjust seasoning as needed and garnish before serving.
