Ingredients

  • 6 ounces thin rice noodles
  • 2 large eggs (beaten)
  • 3 ounces Chinese BBQ roast pork
  • 3 ounces skinless boneless chicken breast
  • 3 ounces small shrimp (peeled and deveined)
  • 1½ tablespoons garlic (minced)
  • 2 leaves napa cabbage
  • ½ large carrot
  • 1 tablespoon Shaoxing rice wine
  • 1½ tablespoons curry powder
  • 1 tablespoon oyster sauce

Instructions

  1. Boil water in a pot, cook rice noodles until al dente, drain, and set aside.
  2. Marinate chicken and shrimp in a mixing bowl with water, Shaoxing rice wine, salt, and cornstarch.
  3. Scramble beaten eggs in a wok over medium-high heat; remove when cooked.
  4. Stir-fry minced garlic in the same wok, then add napa cabbage, carrot; cook until tender.
  5. Add marinated chicken and shrimp; stir-fry until fully cooked.
  6. Combine everything in the wok including the cooked noodles, scrambled eggs, seasonings; toss for two minutes.
  7. Serve hot.
