  • 2 pounds boneless chicken breasts or thighs
  • 1 large egg
  • 2 cups finely crushed corn flakes
  • 2 tablespoons whole wheat flour
  • Kosher salt
  • 1 pound Brussels sprouts, halved
  • 2 shallots, quartered
  • 2 tablespoons fresh thyme
  • 4 tablespoons salted butter, melted
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons lemon juice
  • 1/2 teaspoon smoked paprika
  • 12 teaspoons cayenne pepper
  • 1/2 teaspoon garlic powder
  • Kosher salt

Instructions

  1. Preheat your oven to 450°F and line a baking sheet with parchment paper.
  2. In a bowl, mix the chicken with the egg until well combined. In another bowl, combine corn flakes, flour, and salt.
  3. Dredge the chicken in the cornflake mixture until coated and place on one side of the baking sheet.
  4. On the other side, toss Brussels sprouts with olive oil and salt.
  5. Bake for 20 minutes until chicken is cooked through; then reduce oven temperature to 400°F.
  6. While baking, whisk together all sauce ingredients until smooth.
  7. Coat the baked chicken with the sauce and return everything to bake for an additional 3-5 minutes.
