  • 2 pieces sirloin steak
  • 1/4 cup Irish whiskey (Jameson)
  • 4 tablespoons unsalted butter
  • 1 pound potatoes (Russets preferred)
  • 1 cup kale (or cabbage)
  • 1 cup full-fat cream
  • 1/2 cup shallots (or onions)

Instructions

  1. Marinate the sirloin steaks in a mixture of Irish whiskey, 2 tablespoons of butter, salt, and pepper for at least 30 minutes.
  2. Boil peeled and chopped potatoes in salted water until tender (15-20 minutes). Drain and return to pot.
  3. Sauté shallots in remaining butter until translucent, then add chopped kale until wilted.
  4. Mash the potatoes and mix in sautéed shallots and kale along with cream until smooth.
  5. Heat a cast iron skillet over medium-high heat and sear steaks for about 4-5 minutes on each side for medium-rare.
  6. Prepare the whiskey cream sauce by adding the marinade to the skillet, stirring in cream, and simmering until thickened.
  7. Serve sliced steaks drizzled with sauce alongside colcannon.
