Ingredients

Scale
  • 8 ounces fettuccine or linguine pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillet
  • 4 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and cook pasta according to package instructions until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
  2. Season the salmon with salt, pepper, and lemon juice. In a skillet, heat olive oil over medium heat and cook the salmon for about 4-5 minutes on each side until cooked through; then flake into pieces.
  3. In the same skillet, sauté garlic for 30 seconds, add spinach and cook until wilted (2-3 minutes). Pour in heavy cream, gradually stir in Parmesan until melted.
  4. Add lemon zest, juice, and optional red pepper flakes; simmer for another few minutes. Toss in drained pasta and flaked salmon; adjust consistency with reserved pasta water if needed.
  5. Serve garnished with fresh parsley.
