  • 1 1/2 tablespoons sugar
  • 1 cup warm water (110°F)
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon finely chopped fresh rosemary
  • 1/2 cup grated parmesan cheese
  • 12 sticks of mozzarella string cheese
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg, beaten
  • Coarse sea salt, for sprinkling

Instructions

  1. In a large mixing bowl, dissolve yeast and sugar in warm water. Let sit for 5 minutes until frothy.
  2. Add flour, salt, rosemary, and parmesan cheese to the yeast mixture; stir until dough forms.
  3. Knead on a floured surface for 5–7 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover with a cloth, and let rise for about 1 hour or until doubled in size.
  5. Preheat oven to 450°F and line a baking sheet with parchment paper.
  6. Boil 10 cups of water with baking soda in a large pot.
  7. Divide dough into 12 pieces; wrap each around a mozzarella stick, sealing ends well.
  8. Boil each pretzel for 30 seconds before placing on the baking sheet.
  9. Brush with beaten egg and sprinkle with coarse sea salt.
  10. Bake for 12–15 minutes or until golden brown.
