Ingredients
- 2 heads of garlic
- Olive oil
- Kosher salt
- ¾ lb raw sliced bacon
- ¼ cup freshly squeezed lemon juice
- 1 tbsp Dijon mustard
- 3 anchovy fillets
- ½ cup grated Parmesan cheese
- 1 bunch lacinato kale
- 3 hearts of romaine lettuce
- ½ lb crusty Italian bread
Instructions
- Preheat oven to 300°F. Prepare garlic by cutting off tops, drizzling with olive oil and salt, wrapping in foil, and roasting for about 2 hours until soft.
- Increase oven temperature to 425°F. Place bacon on a baking sheet and roast for about 20 minutes until crispy; drain on paper towels and chop.
- In a food processor, blend lemon juice, mustard, anchovies, roasted garlic, and Parmesan. Gradually add olive oil until smooth; season to taste.
- Slice kale into ribbons, massage with dressing, and let sit for 10 minutes.
- Toast torn bread in a skillet with olive oil until golden brown.
- Toss kale with romaine, remaining dressing, bacon, croutons, and top with shaved Parmesan before serving.
