- 2 cups cherries (halved, pitted)
- 1 1/3 cups granulated sugar
- 2 large eggs
- 1 egg yolk
- 5 tablespoons unsalted butter (melted)
- 1/3 cup canola or vegetable oil
- 1 teaspoon pure vanilla extract
- 3/4 cup all-purpose flour
- 3/4 cup Dutch process cocoa powder
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper. Spread halved cherries on the sheet, sprinkle with sugar, and roast for 10 minutes. Allow cooling.
- Lower oven temperature to 325°F and prepare an 8×8 inch pan with non-stick spray and parchment paper.
- In a bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
- In another bowl, beat sugar, eggs, and egg yolk until light and fluffy (about 5 minutes).
