- 160 ml water
- 5 grams sugar
- 70 grams butter
- 3 grams fine salt
- 15 grams cornstarch
- 90 grams all-purpose flour
- 2–3 eggs (beaten)
- 500 ml milk
- 1 tsp vanilla extract
- Pinch of salt
- 4 large egg yolks
- 140 grams sugar
- 50 grams cornstarch
- 100 grams milk chocolate (chopped)
- 250 ml heavy cream
- 75 grams white chocolate
- 30 grams natural nappage
- 20 grams raspberry puree
- A little red food coloring (optional)
- 75 ml heavy cream
- 1/2 tsp vanilla extract
- 1/2 tsp cream stabilizer or instant vanilla pudding mix
- 150–200 grams fresh raspberries
- Grated milk chocolate
Instructions
- Preheat your oven to 250°C (482°F).
- Prepare the choux pastry by combining water, sugar, salt, and butter in a saucepan until boiling. Mix in cornstarch and flour until dough forms.
- Allow the dough to cool slightly before mixing in beaten eggs until smooth.
- Pipe the dough onto a baking tray and bake for 18-20 minutes in the turned-off oven followed by an additional bake at 170°C (338°F) for another 10-15 minutes.
- For the milk chocolate cream, heat milk with vanilla; whisk together egg yolks with sugar and cornstarch; combine gradually and cook until thickened. Stir in melted chocolate and chill.
- Fill cooled eclairs with chilled cream before glazing with raspberry mixture made from melted white chocolate and raspberry puree.
- Decorate with whipped vanilla cream and fresh raspberries.
