Ingredients
- 6 rice spring roll papers
- 1 red pepper, (thinly sliced)
- 2 carrots, (thinly sliced)
- 1 yellow bell pepper, (thinly sliced)
- 1 large bunch mint leaves
- 1 large bunch cilantro
- ¼ red cabbage, (thinly sliced)
- 1/2 cup peanut butter
- 1 1/2 tbsp low sodium soy sauce
- 1 tbsp raw honey
- 2 tbsp freshly squeezed lime juice
- 1/2 tsp chili paste
- 1 tsp fresh grated ginger
Instructions
- Wash and thinly slice the red pepper, carrots, yellow bell pepper, and red cabbage. Rinse mint and cilantro.
- In a mixing bowl, combine peanut butter, soy sauce, honey, lime juice, chili paste, and ginger; mix until smooth.
- Soak one rice paper in warm water for 10 seconds until pliable; lay flat.
- Place a small handful of vegetables in the center of the rice paper; fold sides over and roll tightly from the bottom up.
- Repeat until all ingredients are used. Serve with Ginger Peanut Sauce for dipping.
