- 1 green onion, finely chopped

- 2 tablespoons regular soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon oyster sauce (or vegetarian stir fry sauce)
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- ½ tablespoon cornstarch
- ¼ cup chicken stock (or vegetable stock)
Instructions
- Prepare the sauce by mixing soy sauces, oyster sauce, sesame oil, minced garlic, cornstarch, and chicken stock in a small bowl.
- Soak the lo mein noodles in hot water for about 15–20 seconds until loosened; strain and set aside.
- In a large skillet or wok over medium-high heat, heat the vegetable oil. Add carrots, red bell pepper, snow peas, mushrooms, and napa cabbage; cook for 1–2 minutes until tender.
- Reduce heat to medium; add the soaked noodles and prepared sauce to the skillet.
- Toss everything together until well combined. Garnish with green onions before serving.
