  • 1 cup napa cabbage, chopped
  • 1 cup red bell pepper, julienned
  • ¾ cup snow peas, trimmed
  • ½ cup carrot, julienned
  • 4 button mushrooms, sliced
  • 1 green onion, finely chopped
  • 1 tablespoon vegetable oil
  • 2 tablespoons regular soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce (or vegetarian stir fry sauce)
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • ½ tablespoon cornstarch
  • ¼ cup chicken stock (or vegetable stock)

Instructions

  1. Prepare the sauce by mixing soy sauces, oyster sauce, sesame oil, minced garlic, cornstarch, and chicken stock in a small bowl.
  2. Soak the lo mein noodles in hot water for about 15–20 seconds until loosened; strain and set aside.
  3. In a large skillet or wok over medium-high heat, heat the vegetable oil. Add carrots, red bell pepper, snow peas, mushrooms, and napa cabbage; cook for 1–2 minutes until tender.
  4. Reduce heat to medium; add the soaked noodles and prepared sauce to the skillet.
  5. Toss everything together until well combined. Garnish with green onions before serving.
