Ingredients
- 1 small yellow onion
- 3 cloves garlic
- 2 tbsp avocado oil
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1.5 tsp ground turmeric
- 0.5 tsp cinnamon
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp chili powder
- 2 boneless skinless chicken breasts
- 1 can (15 oz) full-fat coconut milk
- 0.25 cup pumpkin puree
Instructions
- Dice the onion and mince the garlic; cube the chicken.
- Heat avocado oil in a large frying pan over medium-low heat and sauté the onion and garlic until fragrant (about 3 minutes).
- Toast spices (ginger, cumin, turmeric, cinnamon, black pepper, salt, chili powder) in the pan for about one minute.
- Increase heat to medium, add cubed chicken, and sauté until almost fully cooked (around 6 minutes).
- In a bowl, mix pumpkin puree and coconut milk until combined.
- Pour sauce into the pan with chicken; increase heat to medium-high until bubbling forms.
- Reduce heat to low and simmer for about 8 minutes, stirring occasionally.
- For a thicker sauce, mix arrowroot starch with water and add to curry while stirring until desired consistency is reached.
- Remove from heat and serve over rice or cauliflower rice.
