  • 2 sheets frozen puff pastry
  • 1 cup fresh or frozen raspberries
  • 2/3 cup granulated sugar
  • 1 1/2 tablespoons cornstarch
  • 1 tablespoon water
  • 1 tablespoon maple syrup
  • 1/2 tablespoon dairy-free milk

Instructions

  1. Prepare the raspberry filling by combining raspberries and sugar in a mixing bowl. Gently mash if using fresh raspberries, then stir in cornstarch and water.
  2. Preheat your oven to 400°F (200°C). Roll out each sheet of puff pastry on a floured surface to about ¼ inch thick.
  3. Cut each sheet into triangles with a base width of about 4 inches.
  4. Place a spoonful of raspberry filling at the base of each triangle and roll towards the tip to form croissants.
  5. Mix maple syrup with dairy-free milk and brush over each croissant before placing them on a parchment-lined baking sheet.
  6. Bake for 25–30 minutes until golden brown and flaky. Allow to cool slightly before serving.
