- 1 cup fresh or frozen raspberries
- 2/3 cup granulated sugar
- 1 1/2 tablespoons cornstarch
- 1 tablespoon water
- 1 tablespoon maple syrup
- 1/2 tablespoon dairy-free milk
Instructions
- Prepare the raspberry filling by combining raspberries and sugar in a mixing bowl. Gently mash if using fresh raspberries, then stir in cornstarch and water.
- Preheat your oven to 400°F (200°C). Roll out each sheet of puff pastry on a floured surface to about ¼ inch thick.
- Cut each sheet into triangles with a base width of about 4 inches.
- Place a spoonful of raspberry filling at the base of each triangle and roll towards the tip to form croissants.
- Mix maple syrup with dairy-free milk and brush over each croissant before placing them on a parchment-lined baking sheet.
- Bake for 25–30 minutes until golden brown and flaky. Allow to cool slightly before serving.
