- 1 tbsp vegetable oil
- 11 ounces kielbasa (sliced)
- 1 yellow onion (diced)
- 2 carrots (peeled and cut into half-moons)
- 1 garlic clove (minced)
- 5 cups chicken broth
- ¼ head savoy cabbage (chopped)
- 12 cheese-filled pierogi
- 3 tbsp chopped fresh dill
- Salt and black pepper to taste
Instructions
- Prep your ingredients: slice kielbasa, dice onion, chop carrots and cabbage, and mince garlic.
- In a large pot, heat vegetable oil over medium heat. Add kielbasa slices and cook until browned (about 5 minutes). Remove from pot.
- Sauté onions, garlic, and carrots in the same pot for about 3 minutes until softened.
- Pour in chicken broth; bring to a boil. Add cabbage and simmer on medium-low for 10 minutes.
- Stir in cheese spread until melted; add pierogi and cook until they float (3-8 minutes depending on whether they are fresh or frozen).
- Turn off heat; mix in cooked kielbasa and chopped dill. Season with freshly ground black pepper before serving.
