- 225g unsalted butter
- 225g dark brown sugar
- 4 large eggs
- 225g self-raising flour
- 450g mixed dried fruit (raisins, currants, sultanas)
- 75g chopped candied fruit
- 50g chopped almonds
- 2 tbsp brandy (plus extra for feeding)
- Mixed spices (cinnamon, nutmeg)
Instructions
- Preheat your oven to 150°C (300°F) and grease a 20 cm round cake pan, lining it with parchment paper.
- Cream together the softened butter and dark brown sugar until light and fluffy.
- Gradually add beaten eggs, mixing well after each addition.
- Sift in the flour and mixed spices; gently fold until just combined.
- Stir in the mixed dried fruits, candied fruit, almonds, and brandy until evenly distributed.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 2 to 2.5 hours or until a skewer inserted into the center comes out clean.
- Allow cooling in the pan for 10 minutes before transferring to a wire rack.
- Once cooled, poke holes in the cake with a skewer and brush generously with extra brandy.
