- 2 1/4 cups cake flour
- 1 1/2 tsp baking powder

- 1/2 cup + 2 tbsp softened, unsalted butter
- 1 cup buttermilk
- 1 1/2 cups granulated sugar
- 1 1/2 tbsp vanilla bean paste
- 3 eggs, at room temperature
- 3 cups fresh, thinly sliced peaches
- 1/4 cup + 2 tbsp granulated white sugar
- 1 1/2 cups heavy whipping cream
- 3/4 cup powdered sugar
- 1 1/2 tsp vanilla bean paste
Instructions
- Preheat oven to 350°F (175°C) and grease round baking pans.
- In one bowl, combine cake flour, baking powder, baking soda, and salt.
- In another, cream butter and sugar until fluffy. Add eggs one by one, then stir in vanilla.
- Gradually mix in flour mixture and buttermilk alternately until smooth.
- Pour batter into pans and bake for about 35 minutes or until a toothpick comes out clean. Cool on racks.
- Toss sliced peaches with sugar and let sit for juices to release.
- Whip heavy cream with powdered sugar until stiff peaks form.
- Once cooled, layer the cakes with whipped cream and peach filling between them.
