  • 2/3 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • red food coloring
  • royal blue food coloring

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  2. In a large mixing bowl, cream together the butter and sugar using an electric mixer until the mixture is light and fluffy.
  3. Add the egg, one at a time, beating well after each addition. Then stir in the vanilla extract, mixing until fully incorporated.
  4. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  5. Remove the dough from the bowl and divide it into three equal sections. Wrap one piece in wax paper and refrigerate; this will be your white layer.
  6. Dye two portions of dough with red and blue food coloring in separate bowls. Mix until you reach your desired shades and shape into rectangles.
  7. Roll out each colored dough between parchment paper into rectangles about 1/8-inch thick.
  8. Peel off one layer of wax paper from the red dough and place it on top of the white dough, followed by the blue layer. Lightly roll all three layers together while trimming excess edges.
  9. Starting at one end of your layered rectangle, tightly roll it into a log shape. Wrap this log and chill in the fridge for at least four hours or freeze for thirty minutes.
  10. Preheat your oven to 350ºF and line two baking sheets with parchment paper. Slice the cookie log into rounds about 1/4-inch thick.
  11. Place cookie rounds on prepared baking sheets about two inches apart. Bake for 9 to 11 minutes until pale golden brown. Let them cool before transferring to a wire rack.
