Instructions

  1. Prepare your ingredients.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  3. Cream butter and sugar: In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Add eggs and vanilla: Add the egg one at a time while beating well after each addition, then mix in the vanilla extract.
  5. Combine wet and dry ingredients: Gradually add the flour mixture into the wet ingredients and mix just until combined.
  6. Divide dough: Remove the dough from the bowl and divide it into three equal sections.
  7. Shape white dough: Shape one piece of dough into a rectangle, wrap it in wax paper, and refrigerate.
  8. Color remaining dough: Color one portion of dough red and another blue using food coloring and mix until fully incorporated.
  9. Shape colored dough: Form both colored portions into rectangles between wax paper and refrigerate for at least 30 minutes.
  10. Roll out colored dough: Roll out each colored dough into rectangles about 1/8-inch thick.
  11. Layering colors: Peel off wax paper from each layer, layer white on top of red, then place blue on top of white, and roll together.
  12. Roll into log: Roll tightly into a log and wrap in wax paper again, refrigerate for at least four hours or freeze for thirty minutes.
  13. Preheat oven & prepare baking sheets: Preheat your oven to 350ºF and line baking sheets with parchment paper.
  14. Slice cookies: Slice logs into rounds about 1/4-inch thick and arrange them on baking sheets.
  15. Bake cookies: Bake for approximately 9 to 11 minutes until pale golden, then let them cool.
