  • 2 lbs boneless chicken breasts
  • 1 egg
  • 1 Tbsp sunflower oil
  • 3/4 cup cornstarch
  • 1/3 cup all-purpose flour
  • 1/2 cup white distilled vinegar
  • 1/2 cup cane sugar
  • 1/4 cup soy sauce
  • 1 Tbsp orange juice concentrate

Instructions

  1. Cut chicken into bite-sized pieces. In a bowl, whisk together the egg, sunflower oil, salt, and pepper.
  2. In another bowl, mix cornstarch and flour. Dip each chicken piece into the egg mixture, then coat in the flour mix.
  3. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry chicken in batches until golden brown (5-7 minutes).
  4. While chicken cooks, combine vinegar, sugar, water, soy sauce, crushed red pepper flakes, garlic, ginger zest, orange juice concentrate, and cornstarch in a saucepan. Cook over medium heat until thickened.
  5. Once fried, toss chicken with warm orange sauce until well-coated.
  6. Serve hot over rice or with steamed vegetables.
