  • 1/4 cup unsalted butter (room temperature)
  • 1/4 cup vegetable shortening (room temperature)
  • 2 cups powdered sugar (for filling)

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a bowl, sift together almond flour, powdered sugar, and cocoa powder. Set aside.
  3. In a stand mixer, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form. Mix in salt, vanilla extract, and food coloring.
  4. Gently fold in dry ingredients until smooth.
  5. Pipe circles onto prepared sheets and let rest for 30 minutes before baking for 16 minutes.
  6. For the filling, cream butter and shortening; gradually add powdered sugar and vanilla until fluffy.
  7. Once cooled, sandwich filling between macaron shells.
