  • 1 pound boneless chicken thighs
  • 1 onion, diced
  • 2 medium carrots, sliced
  • 24 tablespoons red curry paste
  • 1 tablespoon freshly grated ginger
  • 4 garlic cloves, minced
  • 5 cups low sodium chicken broth
  • 2 (14 oz.) cans quality coconut milk
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 56 kaffir lime leaves
  • 3 tablespoons minced Thai or regular basil
  • 1.5 teaspoons salt
  • 0.5 teaspoon pepper
  • 8 oz. cremini mushrooms, sliced
  • 1 red bell pepper, chopped
  • 1 cup chopped bite-size cauliflower florets
  • 3 oz. rice vermicelli/thin rice noodles/sticks, broken into pieces
  • 0.25 cup chopped cilantro
  • 23 tablespoons fresh lime juice
  • 1.5 teaspoons sriracha

Instructions

  1. Heat olive oil in a large Dutch oven and sear chicken until golden. Remove and set aside.
  2. Sauté onions and carrots in the same pot until softened; add red curry paste, ginger, and garlic.
  3. Return chicken to the pot; add broth, coconut milk, soy sauce, fish sauce, kaffir lime leaves, basil, brown sugar, salt, and pepper. Simmer for 15 minutes.
  4. Shred the chicken; add mushrooms, bell pepper, cauliflower florets, and noodles to simmer for 5 minutes.
  5. Stir in shredded chicken with cilantro and lime juice; adjust seasoning and serve garnished with crushed peanuts.
