Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 1 tablespoon unsalted butter
  • 1 teaspoon sugar
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 cup shredded Gruyère or Swiss cheese (optional)
  • Fresh chopped parsley for garnish

Instructions

  1. Caramelize the onions: In a large skillet, heat olive oil and butter over medium heat. Add sliced onions with salt and sugar; cook for 20-25 minutes until deeply caramelized.
  2. Sear the chicken: Push onions aside; add chicken pieces seasoned with salt, pepper, thyme, and oregano. Sear for 2-3 minutes per side until slightly browned. Stir in garlic.
  3. Combine rice and broth: Sprinkle rice over the mixture and pour in beef broth. Stir gently to combine.
  4. Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 18-22 minutes until rice is tender.
  5. Finish with cheese: Turn off heat; sprinkle cheese on top if using. Cover again for five minutes until melted.
  6. Garnish and serve: Top with fresh parsley before serving.
