- 1 lb boneless, skinless chicken breast or thighs
- 1 cup long-grain white rice
- 1 cup honey BBQ sauce
- ½ onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 2 cups chicken broth (or water)
- Salt and pepper to taste
Instructions
- Dice the chicken into bite-sized pieces and season with salt and pepper.
- In a large skillet over medium-high heat, heat olive oil and sear the chicken until golden brown (5–7 minutes). Remove from skillet.
- In the same skillet, sauté chopped onion for 2–3 minutes until translucent. Add minced garlic and cook for another minute.
- Stir in uncooked rice and toast for about a minute.
- Pour in chicken broth, scraping any bits from the bottom of the pan.
- Return chicken to the pan along with BBQ sauce; mix well.
- Lower heat, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
- Fluff rice gently with a fork and serve.
