Ingredients
- 1 lb. brussels sprouts, trimmed and halved
- 1 tbsp olive oil
- 1 (15 oz.) can corn, rinsed and drained
- 2 tbsp mayo
- 2 tbsp sour cream or plain Greek yogurt
- 1 tsp chili powder
- 1/4 tsp paprika
- 1 tbsp fresh lime juice
- 2–3 tbsp chopped cilantro
- 1/4 cup cotija cheese, grated
Instructions
- Preheat your air fryer to 380°F or your oven to 400°F.
- In a bowl, toss brussels sprouts with olive oil, salt, and pepper.
- For air frying: Cook for 6 minutes, toss, then continue for another 4–7 minutes until crispy. For baking: Arrange sprouts on a baking sheet and bake for 18–20 minutes, tossing halfway through.
- In a small saucepan over medium heat, warm the canned corn.
- In another bowl, mix mayo, sour cream, lime juice, chili powder, and paprika.
- Combine the corn with the mayo mixture; cook for an additional two minutes while stirring.
- Toss the corn mixture with crispy brussels sprouts in a large bowl.
- Serve topped with cotija cheese and cilantro.
