  • 1 lb. brussels sprouts, trimmed and halved
  • 1 tbsp olive oil
  • 1 (15 oz.) can corn, rinsed and drained
  • 2 tbsp mayo
  • 2 tbsp sour cream or plain Greek yogurt
  • 1 tsp chili powder
  • 1/4 tsp paprika
  • 1 tbsp fresh lime juice
  • 23 tbsp chopped cilantro
  • 1/4 cup cotija cheese, grated

Instructions

  1. Preheat your air fryer to 380°F or your oven to 400°F.
  2. In a bowl, toss brussels sprouts with olive oil, salt, and pepper.
  3. For air frying: Cook for 6 minutes, toss, then continue for another 4–7 minutes until crispy. For baking: Arrange sprouts on a baking sheet and bake for 18–20 minutes, tossing halfway through.
  4. In a small saucepan over medium heat, warm the canned corn.
  5. In another bowl, mix mayo, sour cream, lime juice, chili powder, and paprika.
  6. Combine the corn with the mayo mixture; cook for an additional two minutes while stirring.
  7. Toss the corn mixture with crispy brussels sprouts in a large bowl.
  8. Serve topped with cotija cheese and cilantro.
