  • 5 ancho peppers
  • 5 guajillo peppers
  • 23 chiles de arbol (optional)
  • 1 large white onion
  • 3 large tomatoes
  • 5 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon dried Mexican oregano
  • 4 cups beef stock
  • 3.5 pounds lamb shoulder (or beef shank/chuck roast)

Instructions

  1. Toast the dried peppers in a large pan over medium heat until their skins darken.
  2. Remove from heat, soak toasted peppers in hot water for 20 minutes until softened.
  3. Sauté chopped onion and tomatoes in olive oil until softened.
  4. Add garlic and cook briefly, then combine sautéed vegetables and rehydrated peppers in a food processor with seasonings and vinegar; blend until smooth.
  5. Marinate cut meat with the blended sauce for at least 2 hours (overnight recommended).
  6. Cook marinated meat in a large pot with remaining beef stock for about 3 hours until tender.
  7. Serve birria as a soup or shredded in tacos with consomé on the side.
